I baked a banana cake with the SIRMAN Minneapolis Convection Oven the same day we roasted the turkey. I just haven't gotten around posting about it yet!

Banana cake is really easy to make and requires only a handful of ingredients that you will usually have at home if you bake often. I used the recipe from here and viola! Banana cakes in less than 45 minutes. With commercial ovens, you save time on baking because first, the temperature in the cavity is usually accurate or very close to the temperature you turned to on the knob. And secondly, they are powerful and able to push the hot air evenly throughout the cavity.
